Skate with Browned Butter


Skate is a fish that is tender and creamy, but has a fibrous, meaty texture. Skate is loaded with collagen, which helps it stay moist even after being thoroughly cooked. It's not an easy fish to find, but if you do, you can make this recipe in about 10 minutes with just a few ingredients that you pretty much always have on hand.

Ingredients Needed: (for 2 servings)
  • 8.8 ounces skate (2 fillets)
  • salt
  • pepper
  • flour (for dusting)
  • 2 TBSP olive oil
  • 2 TBSP butter
  • 1 TBSP lemon juice
  • 1 TBSP capers
  • 1 TBSP parsley, minced
How to Make It:
  • Use paper towels to pat the skate dry and then salt and pepper both sides. Dust the fillets with a light coating of flour.
  • Heat the olive oil in a skillet until hot and then add the skate. Let it fry undisturbed until it's browned on one side, and then flip and brown the other side. To see if it's done you can either cut into a thick part and see if it's no longer pink, or you can use an instant read thermometer (140 degrees F at the thickest part).
  • When the skate is done, transfer it to a serving platter and then pour all the remaining oil out of the pan.
  • Add the butter to the pan and let it melt. Once the foaming subsides, the butter should start to brown. Stir constantly until it reaches a medium brown color and then turn off the heat and whisk in the lemon juice. This will spatter a lot, so be careful.
  • Add the capers, parsley and lemon zest and then pour the sauce of the skate and serve.

Easy Linguine with White Clam Sauce

This is an easy, quick and inexpensive white clam sauce. It is a great introduction to seafood for the kids. They'll love the garlicky butter sauce and pasta! Serve it with some hot and crusty bread ... and a delicious Pinot Grigio (for the grown-ups!)

Ingredients Needed (for 4 servings):
  • 2 (6.5-ounce) cans minced claims with juice
  • 1/4 butter
  • 1/2 cup vegetable (or canola) oil
  • 1/2 tsp minced garlic
  • 1 tbsp dried parsley
  • 1/4 tsp dried basil
  • ground black pepper, to taste
  • 1 package (16 ounces) linguine pasta
How to Make It:
  • Bring a large pot of salted water to boil. Cook pasta according to package directions.
  • Combine clams with juice, butter, oil, minced garlic, parsley, basil, and pepper in a large saucepan. Place over medium heat until boiling. Serve warm over pasta.

Oven-Baked Sea Bass


Eating sea bass helps reduce risks of cardiovascular disorders. Thanks to the abundant quantity of omega 3 essential fatty acids, the fish improves the function of the heart, arteries and veins, and other parts that make up the cardiovascular system of the body. These essential fatty acids help in lowering the 'bad' LDL cholesterol, and increasing the 'good' HDL cholesterol levels in the body. It is amazing to know that including merely two servings of fish in the diet per week, can reduce instances of death from heart diseases, by 1/3.

Sea bass also helps lowering blood pressure. People with regular intake of sea bass fish in their diet, show significant reduction in blood pressure levels.

Macular degeneration is known to be one of the leading causes of blindness in the world. Merely two servings of this fish and other kinds of fish for that matter, can cause a 50% reduction in the risks of developing this disorder. Apart from this, fish and fish oil have always been popular for improving vision in children and adults.

Sea bass fish oil causes a reduction in the accumulation of fat in the body thus, making way for an effective weight loss.


Another omega-3 fish oil benefit is that it offers protection against cancer of the colon, breast and prostate.

Other health benefits of sea bass include improving brain function, dealing with symptoms of inflammation, helping in slowing down aging symptoms, also helping in uplifting mood thus, it acts as a natural antidepressant.

Ingredients Needed:

  • 1 lb sea bass (cleaned and scaled)
  • 3 garlic cloves, minced or crushed
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon Italian seasoning or 1 tablespoon fresh parsley leaves
  • 2 teaspoons fresh coarse ground black pepper
  • 1 teaspoon salt
  • 2 lemon wedges
  • 1/3 cup white wine vinegar (optional) or 1/3 cup white wine (optional)
How to Make It:

Preheat oven to 450F° 

In a cup, mix garlic, olive oil, salt, and black pepper. 

Place fish in a shallow glass or ceramic baking dish.

Rub fish with oil mixture.

Pour wine over fish (optional).


Bake fish, uncovered, for 15 minutes; then sprinkle with parsley or Italian seasoning and continue to bake for 5 more minutes (or until the thickest part of the fish flakes easily).

Drizzle remaining pan juices over fish and garnish with lemon wedges.
