- 4 medium sweet potatoes, peeled & cut into large chunks ~ or cleaned and wrapped whole in aluminum foil
- 1/4 cup milk (or buttermilk), slightly warmed
- 1/4 cup orange juice
- 2 tsp orange zest
- 1/2 tsp salt
- 1/4 tsp fresh ground nutmeg
- 1 tbsp unsalted butter (optional)
How to Make It:
- Steam potatoes in a large, covered pan fitted with a steamer basket until they are tender, about 8 to 10 minutes ~ or bake at 400 degrees F for 60 minutes.
- If baking, remove skin and place potatoes in a large bowl.
- In a large bowl, mash potatoes with milk and orange juice.
- Stir in the zest, salt and nutmeg.
- Top with butter, if desired.
